The Übermilk One

Producing delicious, high quality, milk foam with the Übermilk is a breeze.

But strict adherence to cleaning and monitoring protocols is essential for Irish users to ensure your unit continues to perform optimally.


Irish dairy cattle can be grass-fed most months of the year. And as a result our milk is some of the best in the world. But as a consequence, fresh Irish milk is much higher in fat and protein than fresh milk in other markets. This means consistently monitoring and cleaning are crucial to ensuring the optimal, long-term performance of your Übermilk.

This simple, daily procedure - carried out at the start of the shift - is crucial to helping minimise the risk of milk solid build up inside your element.

The purpose of the Rinse Cycle is to remove any stubborn milk residue that may have been caught in the bends of the element and broken free after soaking in water overnight. We strongly recommend running several rinse cycles every morning, ensuring that the water dispensed is completely clear of any milk residue before proceeding to the Flow Test.

The milk residue / particles in the image above are completely normal. If found we would advise continuing to run multiple Rinse Cycles until the water dispensed is completely clear. Once satisfied that all milk residue has been removed from inside the Übermilk you can then proceed to the Flow Test.


There may be instances following the Rinse Cycle where you may find darker milk solid residue. See the image below:

Example of long-term, baked-on milk solids

The appearance of darker milk solids indicates you may have baked on milk solids inside the element. In this case, we would recommend:

  1. Continue to rinse repeatedly until the water dispensed is completely clear,

  2. Once the water dispensed is completely clear of milk residue, proceed to the Flow Test step and carefully record the results,

  3. If the VARIANCE (%) figure is below the recommend 3.0% you may proceed to milk intake and daily use,

  4. If the VARIANCE (%) figure is above the recommend 3.0% we would recommend running the End of Day Cleaning Cycle once again and then repeating step 1 and 2 above again,

  5. If the VARIANCE (%) figure is still above the recommend 3.0%, we would then recommend running the Intensive Cleaning Procedure right away.

IMPORTANT: Due to the high fat and protein levels in fresh Irish milk, recording accurate and accessible daily flow tests is highly recommended for Übermilk users based on the island of Ireland.

The Flow Test Log will allow you to regularly monitor the performance and health of both your pump and element. These records are the first point of reference should variance, temperature or volume issues ever arise. And reviewing these records will assist greatly in diagnosing any potential issues.

UNDERSTANDING THE FLOW TEST LOG

Milk solids (courtesy of Irish milk) can build up quickly inside the element in cases where cleaning and monitoring protocols are not adequately carried out. These milk solids can quickly build inside the element to the point where milk foam quality, temperature and dispense speeds can be reduced. If milk solid build up is ignored, this may lead to a complete element blockage and potential damage or reduction in the lifespan of the Übermilk pump.

The first indication of pump or element issues will usually appear in either one or both of the two columns on our Flow Test Log Flow Test Log - see image below.


TOTAL VOLUME (G) COLUMN

The figure in the TOTAL VOLUME (G) column allows users to monitor the total, liquid flow / dispense rate from your pump. Simply put, this column monitors to the general health of your pump.

  • Figures recorded in this column should be relatively stable from one day to the next.

  • Any significant drop in this total figure (TOTAL = COLD + HOT) may indicate a pump related issue (eg. blockage leading to or within the pump) or potential milk solid build-up inside the element.

VARIANCE (%) COLUMN

The figure in the VARIANCE (%) column allows users to monitor if there is any milk solid or mineral build up inside your Übermilk by comparing the flow rate both through (HOT) and around (COLD) your element. The recorded figure in this column indicates the general health of your element.

  • Figures recorded in this column can fluctuate slightly from one day to the next but the VARIANCE (%) figure should never exceed 3.0%.

  • A result of 3% or greater in this column may indicate a build up of milk solids or minerals within your element.

If your VARIANCE (%) figure is in excess of 3% following the start of the day Rinse cycle and Flow Test, we would strongly advise NOT proceeding to Milk Intake or begin using the Übermilk. But instead immediately running an additional End of Day Cleaning Cycle. If your variance figure has not improved following this additional cleaning cycle, we would then recommend moving to an Intensive Cleaning Cycle - detailed instructions and video listed here.

Always release the lock nut before adjusting the foam level

How to adjust the milk foam level / density:

  1. Remove the blue protective cap from the ‘needle valve’,

  2. Release the needle valve’s lock nut by turning the ring at the back fully counter-clockwise (to the left) before attempting to adjust the front valve,

  3. Once the lock nut is fully released,

    1. Turn the main valve clockwise (to the right) to DECREASE the air flow and create thinner, silkier milk / micro-foam,

    2. Turn the main valve counter-clockwise (to the left) to INCREASE the air flow and create fluffier, more voluminous milk foam.

  4. Please note only minor adjustments to the needle valve - left or right - should be necessary,

  5. You will need to dispense 100-150ML of milk each time you make and adjustment, before the texture of the milk will change,

  6. Once you have found your desired foam level, turn the lock nut clockwise (to the right) to lock your needle valve into position,

  7. Reattach the blue protective cap to ensure foam level is not accidentally adjusted during service.

Übermilk users in Ireland face far greater cleaning challenges due the high quality of fresh Irish milk.

In addition to following daily cleaning and monitoring protocols, we highly recommend carrying out the Intensive Clean procedure (as a preventative measure) every 4 weeks. Regardless of whether Flow Test results indicate buildup.

The Intensive Clean procedure can also be run in situations where Flow Test results indicate milk solid build up in excess of recommend parameters and daily cleaning and rinsing cycles do not improve flow test results.

  • Please review the Übermilk Detergent Safety Data sheets prior to carrying out this procedure to ensure proper handling,

  • The Intensive Cleaning Procedure can be carried out using either Detergent #1 or Detergent #2. We recommend firstly starting with Detergent #1 and then immediately alternating to Detergent #2 in cases of stubborn build up.

  • NEVER LEAVE UNDILUTED DETERGENT INSIDE THE ÜBERMILK FOR LONGER THAN ONE HOUR

  • NEVER LEAVE UNDILUTED DETERGENT INSIDE THE ÜBERMILK OVERNIGHT


SEVERE RESIDUE BUILD UP

In cases of severe build up - where residue may be baked onto the inside surface of the element - a single Intensive Cleaning cycle may not suffice.

If after the initial Intensive Cleaning Cycle your variance figure still indicates build up, we would recommend running additional Intensive Cleaning Cycles - but at this point alternating between using Detergent #1 and Detergent #2. 60 minutes each, back to back.

In extreme cases, you may need alternate detergents a few times if the buildup has been severely baked into place. If following this procedure your variance figures have not improved, please contact us immediately at support@workflow.coffee
